Holiday Wreath Salad

Ingredients Holiday Wreath Salad

Salad:

  • 2 cups of fresh spinach
  • 1/2 cup of cherry tomatoes
  • 1/4 cup walnuts, toasted
  • 1 low fat string cheese, sliced into 1/4" pieces
  • 1/2 red bell pepper

Dressing:

  • 2 cups of plain fat free Greek yogurt
  • 1 packet of ranch dressing seasoning
  • 1/4 cup fat free milk

Directions

1. Arrange walnuts on a cookie sheet in a single layer. Toast walnuts in the oven at 350° F for 8-10 minutes. Remove from heat and allow to cool.

2. Arrange spinach, tomatoes, cheese, and walnuts in a circle on a plate.

3. In a bowl mix together ranch dressing and Greek yogurt. Add milk and stir until dressing is at desired consistency.

4. Cut the bell pepper to form a ribbon and place at the top of the wreath.
