• 6 egg whites

  • dash of salt

  • 1 tsp cream of tartar

  • 1 2/3 cup sugar

  • 2 Tbsp cornstarch

  • 1 cup heavy cream

  • 1-2 Tbsp powdered sugar

  • Summer fruits of choice (such as, peaches, raspberry, strawberries, blackberries)


Make Pavlova
  1. Preheat oven to 250 degrees
  2. Make meringue, by whipping 6 egg whites with dash of salt until foamy
  3. Then add, 1 tsp cream of tartar and 1 2/3 cup sugar, 2 Tbsp cornstarch and beat until stiff, shiny peaks form.
  4. Line baking sheets with parchment and shape meringue into 3 equal circles.
  5. Bake for 1 hour 15 minutes
Make a whipped cream to spread in between layers and on top of pavlova
  1. Whip 1 cup heavy cream with 1-2 Tbsp powdered sugar and 1/2 tsp vanilla
  2. Top with your favorite summer fruits! I used blackberries, raspberries, peaches and lemon thyme sprigs.
