Mediterranean Dukkah Drizzled Potatoes, Red Peppers, and Chickpeas with Feta Sauce

Ingredients  Mediterranean Dukkah Drizzled Potatoes, Red Peppers, and Chickpeas with Feta Sauce

  • 10 oz fresh baby red, yellow, and purple potatoes, quartered
    (Leave skin on for added fiber)
  • 1 large red pepper, halved
  • 1 lemon, quartered
  • 6 cloves of garlic
  • 1 cup canned chickpeas, rinsed and drained
  • ½ cup and 1 tbsp. extra virgin olive oil
  • 4 tablespoon store bought Dukkah blend (Trader Joe’s or another brand)
  • 2 teaspoons pepper
  • 1 teaspoon smoked paprika
  • 2 teaspoons chili flakes
  • 1 tablespoon parsley (garnish)
  • Salt (optional)

Feta Sauce: 

  • 4 oz reduced fat feta block cheese
  • 2 oz light/reduced fat cream cheese
  • 2 tablespoons fresh lemon juice

Directions

  1.  Preheat the oven to 425° F.
  2. Combine the potatoes, red peppers, lemon wedges, and garlic cloves with ¼  cup of the olive oil on a baking sheet and season with salt (optional) and pepper. 
  3. Rinse and drain chickpeas, then pat dry. Combine chickpeas with 1 tbsp olive oil, salt (optional), and pepper and lay flat on another baking sheet. 
  4. Roast both sheet pans for ~25 minutes. Remove the sheet pans from the oven when potatoes and chickpeas are crispy. 
  5. Finely chop 2 roasted lemon wedges, including the rind, removing any seeds. Mash the roasted garlic into a paste. Add the lemon and garlic to a small bowl. Add remaining 1/4 cup olive oil, the Dukkah blend, and season with salt (optional), pepper, and chili flakes. Keep the herbed oil to the side. 
  6. Slice the roasted pepper into small strips and keep to the side. 
  7. To make the feta sauce, combine the feta, cream cheese, and lemon juice in a blender and blend until creamy. You can add 1 ice cube as you blend the sauce to make it creamier. 
  8. Toss the potatoes, red pepper strips, and chickpeas with ½ of the herbed oil in a bowl.  Swirl the feta sauce onto a serving plate, then arrange the potatoes, red pepper, and chickpeas over the feta. Drizzle over the remaining herbed oil and sprinkle everything with smoked paprika, chili flakes, and salt (optional).  Garnish with minced parsley. Enjoy! 


Note:  

An estimation was given for the pepper, smoked paprika, and chili flakes .  The amounts are really based on user taste or to taste.
