Nutty Tofu Potatoes

Ingredients Nutty Tofu Potatoes

  • Half block Trader Joes Organic Extra Firm Sprouted Tofu
    (use 1 of the 2 half blocks) OR ½ lb of  your favorite tofu
  • 3 tablespoons toasted Sesame Oil (try Trader Joes)
  • 4 or 5 small gold, red or purple potatoes boiled
  • 1 cup broccoli
  • ¼  cup coconut aminos OR soy sauce
  • ¼  cup peanuts

Directions

  1. Dice the tofu into small cubes and lightly sauté in toasted sesame oil.
  2. Cut potatoes in 2-inch pieces and boil until tender and drain.
  3. Steam small pieces broccoli for 1 minute, then lightly sauté broccoli in rest of the sesame oil. 
  4. Mix tofu, potatoes and broccoli in bowl and pour ¼ cup coconut aminos over and stir.
  5. Add peanuts to each portion just before eating.
