Nutty Tofu Potatoes

Ingredients
- Half block Trader Joes Organic Extra Firm Sprouted Tofu
(use 1 of the 2 half blocks) OR ½ lb of your favorite tofu
- 3 tablespoons toasted Sesame Oil (try Trader Joes)
- 4 or 5 small gold, red or purple potatoes boiled
- 1 cup broccoli
- ¼ cup coconut aminos OR soy sauce
- ¼ cup peanuts
Directions
- Dice the tofu into small cubes and lightly sauté in toasted sesame oil.
- Cut potatoes in 2-inch pieces and boil until tender and drain.
- Steam small pieces broccoli for 1 minute, then lightly sauté broccoli in rest of the sesame oil.
- Mix tofu, potatoes and broccoli in bowl and pour ¼ cup coconut aminos over and stir.
- Add peanuts to each portion just before eating.
