Canned Beans Can Do:  Plant-Based Eating with Diabetes

As people with diabetes hear more about plant-based diets, they are also wondering how to make them manageable, delicious and sustainable for themselves and their families.  With an emphasis on one distinct plant-based food that has been nourishing humans for at least 8,000 years – the bean - this webinar will examine research related to the health benefits of beans, bean-centric and plant-based diets, specific to people with diabetes.

Blogger and Cookbook author, Mary Ellen Phipps, MPH, RDN, LD, will share strategies to determine which clients are best suited for a plant-based diet and how to help those clients increase their plant consumption. Featuring some of her favorite plant-based recipes, she will prepare delicious diabetes-friendly dishes (from appetizers to desserts!) that will resonate with RDNs who counsel individuals with Type 2 diabetes, Type 1 diabetes, those who are looking to add more plants to their diet and beyond.

Mary Ellen Phipps, MPH, RDN, LD

Mary Ellen Phipps, MPH, RDN, LD is the cookbook author and registered dietitian behind milkandhoneynutrition.com. As someone who's been living with type 1 diabetes since she was 5 years old, she strives to combine personal experience and professional expertise into relevant and relatable diabetes education. Mary Ellen received her Bachelor's of Science in Nutrition Sciences from Baylor University and her Master of Public Health in Epidemiology from the University of Texas School of Public Health, where she also completed her dietetic internship. You can find her on social media (@milknhoneynutrition on Instagram and @diabetesnutritionist on TikTok) and traditional media helping bring joy back to life and the kitchen for people with diabetes.
